


I have been experimenting making bread for a few years now. Some of my creations include sourdough, Japanese milk bread, Filipino pandesal, and brioche
My favorite has always been the pandesal. The ingredients are so simple: flour, oil, salt, sugar, and yeast (and water). Of course you can make variations out of it. If preferred to be more soft and chewy then you can replace oil with butter, and add warm milk with the yeast instead of warm water.
If you go to my recipes page, you will find flavor variation of the traditional pandesal, which is ube. You can even customize the filling to your preference. Either cheese or jams.


The sourdough was my first bread. I made my own starter and watched it ferment and cultivate as a natural yeast. I was amazed at the outcome of my sourdough and continued making them at least once a week, while I kept feeding my starter.


The sourdough was great for morning toast, grilled cheese, garlic bread, and bread bowls for chowders.
Then I bought myself a stand mixer and got excited to use it. My first bread made with it was a Japanese milkbread. It was really good especially with egg salad sandwiches. The process of stretching and folding was similar to making the sourdough. I enjoyed it!



Then I craved for something buttery and fluffy. I progressed to making brioche! I thought this was good for french toast as well.

I was having fun making breads and feeding it to family and friends. I have been intrigued in the pandesal making process (Filipino bread rolls). I thought it was too much work because of making individual rolls rather than baking the whole dough and slicing it after it’s made.
It turned out, it is really easy and probably the fastest I can make compared to all others since it doesn’t require to proof for hours.


These soft and buttery bread rolls are pretty much good any time of the day. It can be eaten as part of your breakfast with butter and jam, an afternoon snack with your favorite instant noodles (or pancit canton), or dinner rolls with your entree.
